Gluten, Dairy, and Egg free Zucchini bread

This bread is really easy and YUMMY!

Gluten, Dairy, and Egg free Zucchini bread

*I use a large food processor*

1 Large Zucchini
4 eggs (I use Ener-G egg replacer)
2 cups sugar
1 cup oil (i use sunflower)
1 tsp vanilla
3 cups Bob's Red Mill Gluten Free All purpose flour
1 TBL Xanthan gum
1 TBL cinamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder

I chop the zucchini in the food processor as tiny as I can get it. Then I mix in the egg replacer, sugar, oil and vanilla. Then I add the dry ingredients. Make sure it's mixed well. Use (2) 9x5x3 loaf pans and bake at 375 for 1 hour or until a toothpick comes out clean.
