Gluten, Dairy, and Egg free Zucchini bread

This bread is really easy and YUMMY!

Gluten, Dairy, and Egg free Zucchini bread

*I use a large food processor*

1 Large Zucchini
4 eggs (I use Ener-G egg replacer)
2 cups sugar
1 cup oil (i use sunflower)
1 tsp vanilla
3 cups Bob's Red Mill Gluten Free All purpose flour
1 TBL Xanthan gum
1 TBL cinamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder

I chop the zucchini in the food processor as tiny as I can get it. Then I mix in the egg replacer, sugar, oil and vanilla. Then I add the dry ingredients. Make sure it's mixed well. Use (2) 9x5x3 loaf pans and bake at 375 for 1 hour or until a toothpick comes out clean.

We put our eggs in metal whisks and put the dye in large heavy glasses. It was the cleanest egg coloring activity that we've had! No dropped broken eggs or spilled dye. We had a blast!!

I did this today at Toysrus and it worked!! Monday is the last day to pre-order the Toy Story movies because they are released Tuesday!

If you pre-order Toy Story 1 Blueray/DVD combo pack $16.99 & Toy Story 2 Blueray/DVD combo pack $16.99 you get $15 instantly on another movie. I got Princess and the Frog DVD ($19.99) it gave it to me for free!! For some reason it took another $4.99 off! I only paid $10.58. which is the $5 per movie pre-order deposit, that will come off the price of the movies when I pick them up on Tuesday. Doughnut holes...kinda

Aiden's preschool class was having doughnuts with dads, where all the dads come eat doughnuts for breakfast. We found out it was going to be doughnuts holes instead so we had to come up with something fast. I got a bag of Bob's Red Mill pancake mix out and prepared it as the instructions say (but I used Dari-Free milk). We then boiled some sunflower oil and dropped (very carefully!) little spoonfuls of the pancake mix into the oil. They don't take long at all, about 15-20 seconds, just till they get good and brown. We pulled them out and directly put some powdered sugar on them before the oil dried. They were so yummy!! They tasted like funnel cake!! They are better eaten right away, not so good the next day.

GF/CF Birthday party on a budget

This is the Gf/CF and egg free cupcakes we had for Caleb's 3rd birthday. He loves Thomas the Train! I wanted the boys to be able to eat everything at the party so we made cupcakes. I made the cupcake toppers from Thomas stickers, scrapbook paper, and toothpicks. My mom made the cupcake tower, Caleb loved it!! I made vanilla cupcakes
(you can see the recipe HERE) and chocolate cupcakes that were really yummy!! (recipe below)

Chocolate (yummy) cupcakes!
makes 12 cupcakes

1 cup Dari free Milk alternative
1 teaspoon cider vinegar
1 cup Bob's Red Mill all purpose flour
1/2 cup unsweetened cocoa powder (Hershey's natural)
1/4 teaspoon plus 1/8 teaspoon xanthan gum
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
1/3 cup oil (i used sunflower)
1 1/2 teaspoon vanilla extract

1. preheat oven to 350
2. combine milk alternative and cider and set aside
3. whisk together the flour mix, cocoa, xanthan gum, baking soda, baking powder, and salt. whisk out all lumps
4. (i used my stand mixer with paddle attachment) mix milk and cider mixture, sugar, oil, and vanilla. beat for about 1 minute.
5. sift in flour mixture slowly
6. fill cupcake liners 3/4 full
7. bake for 18 minutes, turning half way through. Make sure toothpick comes out clean.

These are the best cupcakes we've had, my husband even loved them and he doesn't eat cake!

I saw this on My Frugal Family and I thought it was really cute!!!
So I thought I would try to make it. I went to the Dollar Tree and I got:
3 bags of 18 plastic Easter eggs $1 each
1 bag of purple Easter grass $1
total cost $4.39 after tax!!

First I cut the shape out of cardboard and glued the bottom 2 rolls of eggs to it. Secondly I glued the grass filling in the holes. Then I cut the long pieces of grass (to make it look cleaner) And finally I glued some random eggs on top to fill in gaps. It took less that 30 minutes and the boys loved it!! **Be careful with the hot glue**

Autism + GF/CF diet + Disney World = best vacation ever!!

Last September we went to Disney World and had the best time!!! Why write about Disney World?? It's the only place where we could have a blast and not have to worry about food. I worry about food all the time! Having a child with autism on the Gluten and Casein free diet with multiple food intolerances to common things like rice, eggs, canola oil, coconut and many many more can very hard at times. We make everything from scratch. All the breads, muffins, cookies, cakes, seasonings everything is made at home. I didn't want to go some where I had to go back to the room and cook meals 3 deals a day, that's not a vacation to me. I started researching on the internet and came across the Disney World's special dietary website HERE. I thought it was worth a try so I emailed them, they got back with me the next morning! I was shocked! The lady was super nice and explained to me the locations that offered allergy free foods. I emailed her for a couple days (I'm sure I drove her crazy) I just wanted to make sure we wouldn't have to worry about anything. She emailed me ingredient lists, locations in each park for certain foods the boys like could be found. She even emailed me copies of the back of the chicken strip box! I couldn't believe the service. We were also going to be there on my husbands birthday and I wanted to surprise him with a mickey shaped birthday cake at our dinner at Chef Mickey's. Thinking it was going to be impossible to get a Gluten free (wheat), Casein free (diary), egg free, canola oil free cake, I called the special dinning number anyway. They told me that they would have one there waiting on us at Chef Mickey and to not worry about it. I can't tell you how shocked my husband and boys were when they brought out a chocolate Mickey mouse shaped cake!!
We got an awesome deal where we got the dining package for free. We had 1 table service. meal, 1 quick service meal and 1 snack per person per day. We used our table service for a character meal every day. It worked out great for us, the character came around when the boys were eating and we didn't have to stand in long lines out in the heat to meet the characters. (Most child with Autism have a hard time waiting in lines, and being hot doesn't help at all!)

brunch at Princess Storybook Dining at Akershus Royal Banquet Hall-Epcot (we ate a late breakfast here, the breakfast is American but the other meals here are Norwegian buffet, we recommend the breakfast for more variety do to diet restrictions)

2 Dinners at Crystal Palace (Pooh characters)-Magic Kingdom
lunch at Sci Fi Dine In-Hollywood studios
Lunch at Rain Forest Cafe- *not on the dining plan* Animal Kingdom
At the Table service meals the chef will come out and talk to you about the food allergies. He will tell you what is on the menu you can order and they always offered to make things "off" menu just so the boys would have things they like. At the Buffets the chef would also come out and walk with me around the buffet pointing out everything we could or could not have, they also offered to make special items for us. Most of the times we would just eat what was available, but we did get the special mickey shaped waffles ( they were awesome !!!) Make sure you book your reservations for all your table service meals. If you don't you may not get in or you may have to wait a very long time. You also need to remember to tell them about your dietary needs, if you call in to book just tell the cast member, if you book on the internet it will have a place for you to mark any special dietary needs. You want to make sure they know you are coming so they are prepared with options for you.

Quick service meals we ate at:
Pecos Bill we had fries and hamburgers with GF/CF egg free buns with grapes- Magic Kingdom
Comic Rays they had hotdogs on special buns with fries and special cookies-Magic Kingdom
Our favorite place was Columbia Harbor House they have awesome chicken stripes and fries, the only problem is that they didn't have a dessert option but the boys were happy with extra grapes-Magic Kingdom
Abc Commissary they had hamburgers special buns and cookies-Hollywood Studios

Snacks
We got French fries, fruit, waters, juice, popsicles, special cookies and brownies. We had so many credits, even after getting all of the stuff listed above that I went the night before we left and stocked up on juice and snacks for the drive home.

Guest Assistance Card
When you enter any of the parks go to the Guest Relations building to request a Guest Assistance card. Explain your child's needs, limitations and any of your concerns to the Disney World employee (they call all employees cast members), and you will be issued a Guest Assistance Card. This one card will work at all the parks the entire length of your stay. The card will help cast members who operate the rides know that your family should be permitted to use an alternative entrance when you ride. You will still have to wait, but the time will be cut down. If you need to keep your child in the stroller/wheelchair ask the cast member at the Guest relations for a special sticker that will allow you to keep your child in the stroller/wheelchair will waiting in line. They may tell you to use the fastpass system on rides that have that option available. We did get one of these cards the first day we were there, but we never used it. I think it was the time of year, there wasn't that many people there.

A few more tips
*If possible get up early and get the parks when they open. There will be fewer people and it's cooler.
*I also recommend going back to your resort to rest. Even though it's fun it can be overload and every one will do better after a rest. If your child won't take a nap or rest maybe a dip in the pool. It's always good to get out of the heat. Then return to the parks later that afternoon.
*Make sure everyone drinks plenty of water, it's hot and I know my kids get cranky when they don't get enough cold liquids.
*If possible go at an off time, usually when school is in. There will be fewer people and that usually makes it value season so you even get to save money!

We count Disney World as therapy, I know it sounds crazy but they made so many improvements while we were there. I couldn't believe how many new words came from that trip! I think it's a combination of characters they love, a break from the daily therapies, and even mom and dad are having fun. It's so great to get away and not even think about autism ,therapies, cooking and everything for a week. Just let go and have fun!!

The Vanderbilt Treatment and Research Institute for Autism Spectrum Disorders (TRIAD) is dedicated to improving assessment and treatment services for children with autism spectrum disorders and their families while advancing knowledge and training. TRIAD offers workshops and training for parents and teachers. Please check out their website for more information. I've been to one of their workshops in Jackson. When they had the workshop they did one in West TN, Middle TN, and East TN. I really enjoyed it and learned some really useful ideas about using pictures to communicate.

STEP: Support and Training for Exceptional Parents

This is a great resource for Tennessee families! They helped me when I couldn't get an IEP meeting, so he could start services with the school. I've also been to a workshop and they are very sweet and caring people. The following is from their website:

STEP is a statewide family-to-family program in Tennessee, established in 1989 by a grant from the U.S. Department of Education. The purpose of STEP is to support families by providing free information, advocacy training, and support services to parents of children eligible to receive special education services under the Individuals with Disabilities Education Act (IDEA) who reside in Tennessee.
STEP services are available to any parent or family member of a special education student or a student who may need special help in school (birth through age 22). There is no charge for services to parents. Professionals in the education field are welcome to attend workshops without cost, however there may be a nominal cost for printed materials. Baby Babble DVDs are AWESOME!! I got these when Aiden was still nonverbal. When I first put them in I was so upset because it looked like Baby Einstein. Behavioral Intervention for Young Children With Autism: A Manual for Parents and Professionals is hands down my favorite ABA Therapy book!!! Catherine Maurice wrote this book after seeing her boys recover from Autism using ABA. This book does a wonderful job breaking down the steps and methods of ABA. The book is 400 pages long including the index.

What I LOVE about this book is:
It has a beginning curriculum guide, intermediate curriculum guide, and advanced guide. It shows you in each curriculum guide what your child should be working on and when to move on.
